-Tuna (fresh or frozen) -Sushi grade rice vinegar -Sea salt

-Sugar -Large plastic container with lid or ziplock bag -Sharp knife

3) Let sit for 24 hours in the fridge, flipping once halfway through to ensure even marinating.
